Title: Jamaican Run Down Stew with Tofu

Yield: 4 Servings

1cOnions; diced
2cFirm tofu; diced
1/2c;water
1/2cRed bell pepper; diced
1/2cCarrots; peeled and grated
2tsGarlic; minced
1/2tsSea salt
1/4tsBlack pepper
1 1/2cRun Down Sauce (see recipe)
1cChayote squash; diced

Put all of the ingredients, including the sauce, but not the squash, in a saucepan. Simmer for about 15 minutes. Then add the squash and continue cooking until the vegetables are tender-crisp. Serve over rice.
